Enzymes that Break Down Carbohydrates
Amylase is an enzyme in saliva that breaks down carbohydrates while still in your mouth. Cellulase breaks down crude fiber, improving the absorption of grains, fruit, and vegetables. Maltase catalyzes the hydrolysis of the disaccharide maltose to the simple sugar glucose. Lactase breaks down lactose (milk sugar).
